There is none in the SOA.  That has become the negative-caching TTL.

TTLs are kept with each RR.  The "default" is now in the $TTL ...

No, it is per resource record.

No.  Individual records' TTL can be changed.

If you mean something different, there is also such a thing as an
incremental zone transfer - pass only the records that have changed.
