You can have any no. of mail exchangers at a time. (For a real example, try a nslookup with MX option for yahoo.com or so.) But make sure that their priorities should be nice to handle the situation.

www.domain.foo.    MX   20 xchange.domain.foo.
www.domain.foo.    MX   10 sendmail.domain.foo.
