Migrating Peers

Hi all,

I was wondering what is best practice to add a peer to a site with the least amount of interruption?
The site has one server already and we have a second peer sitting off-site. We want to remove the
off-site peer and add the new on on-site.

Would I have to start/stop services in a certain way? I don't want the new one to start handing out leases
that are already in use.

I hardly ever do DHCP configurations so any help is much appreciated. Hope it all makes sense :)
