Managing the many virtual interfaces can be tricky, depending onhow many 
VLANs you're talking about.

Most large sites use a dhcp relay running on each of the subnet routers 
to forward dhcp requests to the central dhcp server. This way the dhcp 
server doesn't need an interface on every subnet.

The dhcp configuration is very similar in either case. You define the 
subnet definitions and it all "just works"...
