If that's all you want then it's not a subdomain.

Just setup an A record for staging to point it to whatever IP address the
website is running on.

It's basically identical to what you do for a www.whatever just change www
to staging.

http://staging.simonwebdesign.com how would I set it up and where would the
staging part have to pint to?
