How can I setup my DNS when my ISP DNS crashes

You mean you configured them with "forward-only"? Suppress that
option.

See above. Also, check that your name servers are able to reach the
outside. From one of your name servers, try a "dig @a.root-servers.net
NS fr." for instance.
