do i need MX records for subdomains?

If the only data you need in subdomain.domain1.com are the MX RR's, then
you do not need to create / delegate a seperate domain. In the
domain1.com zone db file, do this:
subdomain IN MX 10 mailex1.somedomain.com.
subdomain IN MX 20 mailex2.someotherdom.com.
Now, mail addressed as specified above will go to the two mail servers
listed in these MX RR's.
