I'm not sure what the "nistag" option is. Google only has a few hits for it. The
one I'm guessing you mean is the one from the Juniper help pages:

"nistag (Type string) Defines the identifying tag used by the Apple® NetInfo
database. To specify Nistag, use option code 113."

If this is what you mean, the option is defined in DHCP 3.1.0, now in alpha, as
netinfo-server-tag. From the dhcp-options man page:

       option netinfo-server-tag text;

         The  netinfo-server-tag option has not been described in any RFC, but
         has been allocated (and is claimed to be in use) by Apple  Computers.
         It's  hard to say if the above is the correct format, or what clients
         might be expected to do if values were configured.  Use at  your  own
         risk.

For earlier versions of DHCP, you can define this yourself:

option netinfo-server-tag 113 = text;
