I was unclear, I am sorry. I was thinking about an option to add / select the field displayed to the right of the screen in stork right now, i.e., changing Kea Subnet ID into “comment” or something else that would be more useful. Or allow users to pick a field in there.

Yes: Services -> Kea Apps -> Click on the Name you are interested in (e.g., kea at 127.0.0.1 <mailto:kea at 127.0.0.1> ) -> "Raw Configuration"

They sort of are but probably not in the way you are hoping.  There is an area where you can view the raw Kea configuration.  They would be shown there.
